Ingredients:

 

For Making Tasty Baati:

Wheat Flour: 6 Cups or Bowls
Turmeric Powder: 1 tablespoon
Ajwain, ajowan, or carom Seeds: 1 tablespoon
Eating baking soda: 1/4 tablespoon
Salt: 1 tablespoon
Edible oil: 1 big tablespoon or ½ bowl
Pure Ghee: 1 bowl or cup
Water: As per Need

 

Method:

1. In first step, take 6 bowl or cup wheat flour in the big bowl and mix all ingredients as turmeric powder, ajwain, eating baking soda and salt.
2. In the next step, now add edible oil into the above mixture and mix properly till mixture come get ladoo type shape if take in palm and press.
3. In the next step, finally add water to ready mixture for making knead into a firm dough.
4. In next step, divide the dough into 10 equal portions and shape each portion into an even sized round. Flatten the rounds lightly using your thumb to make an indentation in the centre of the baati.
5. Now baked baatis over firewood or over kandas or Oven for 15 to 20 Minutes.
6. After baking baatis, take pure cow or buffalo Ghee in the frying pan and dip the baked baatis after breaking in between.
7. After frying for few minutes, the tasty baatis are ready to serve with Dal Tadka, Baingan Bharta and Baati Churma Ladoos.

For Making Baingan Bharta:

Brinjal or Baingan: 2 medium size
Chopped Tomato: 1
Chopped Onion: 1
Chopped Garlic: 3 to 4 pieces
Chopped Green Chilies: 2
Methi or Fenugreek Powder: 1/4 tablespoon
Hing, Heeng or Asofoetida: ¼ tablespoon
Coriander or Dhania Powder: 1/2 tablespoon
Cumin or Jeera: 1/2 tablespoon
Turmeric Powder: 1/2 tablespoon
Red Chilies Powder: 1/4 tablespoon
Salt: 1/2 tablespoon
Edible oil: 1 big tablespoon or ½ bowl
Chopped Green Coriander: For Garnish

 

Method:

1. In first step, Grease the brinjal with oil and roast it over an open flame till it is cooked.
2. In the next step, heat the ghee in a pan and add the cumin seeds, Methi or Fenugreek Powder and Hing, Heeng or Asofoetida.
3. In the next step, when they crackle add the onions and fry till they turn golden brown.
4. In next step, add the garlic and green chilies and fry for a few more seconds.
5. Add the chopped tomatoes, turmeric powder, coriander and cumin seeds powder and cook till the mixture leaves oil.
6. Finally, add the mashed roasted brinjal, add garam masala (if neede) and salt, mix well and cook for 3-4 minutes.
7. Serve hot garnished with coriander. Now Baingan Bharta is ready to be a part of Dal Baati Churma Laddos Plate or Thali.

Though there are many simple and best Dals in Punjabi / Rajasthani cuisine, nothing beats the simplicity and appeal of dal tadka, a yellow dal garnished with tadka (tempering) of garlic, dry red chilli and cumin seeds. Its rich and mouthwatering flavor profile makes it suitable to be served with array of Indian flat breads and makes a healthy meal. It is the cooking process which makes it so exclusive and tempting. Normally in any dal recipe, tempering is prepared first and then cooked dal is added to it but not in this recipe; here pressure-cooked dal is first mixed with fried ginger, garlic, green chilli and onion and then ghee tempered garlic and spices are poured over it at the time of serving.

Toor Dal (arhar dal): 1 Bowl or Cup
Chopped Tomato: 1
Chopped Onion: 1
Kari Patta or Curry leaf: 6 to 8 leaves
Chopped Garlic: 3 to 4 pieces
Chopped Green Chilies: 2
Hing, Heeng or Asofoetida: ¼ tablespoon
Cumin or Jeera: 1/2 tablespoon
Turmeric Powder: 1/2 tablespoon
Red Chilies Powder: 1/4 tablespoon
Rai or Black Cumin: 1/2 tablespoon
Salt: 1/2 tablespoon
Edible oil: 1 big tablespoon or ½ bowl
Chopped Green Coriander: For Garnish
Garam Masala: 1 tablespoon (Optional)

 

Method:

1. In first step, rinse toor dal in water and add them into 3-5 liter capacity steel or aluminum pressure cooker. Add 2-cups water and pressure cook for 4-whistles over medium flame. Turn off flame and allow the pressure to release naturally. Open the lid and keep the cooked dal aside.
2. In the next step, heat 2-teaspoons ghee/oil in a pan. Add sliced onion and fry until it turns light brown. Add crushed garlic and chopped green chilli and fry for 30-40 seconds. Make sure, garlic does not turn dark brown.
3. In the next step, add chopped tomato and fry until it turns soft.
4. In next step, add and mix turmeric powder and red chilli powder.
5. Finally, add cooked dal and mix well.
6. Add 1-cup water and stir to mix. Taste for the flavor and add salt accordingly.
7. Cook on medium flame until you get the desired consistency of dal or for approx. 5-6 minutes, stir multiple times in-between. Remove it from flame and transfer into a large serving bowl.
8. Serve hot garnished with coriander. Now Dal Tadka is ready to be a part of Baingan Bharta-Baati-Churma Laddos Plate or Thali.
9. If needed then prepare the tempering by heating 2-teaspoons ghee in a small pan. Add cumin seeds and allow them to sizzle. Add chopped garlic, dry red chillies and asafoetida, mix well and allow garlic to turn light brown.
10. Remove pan from flame and pour prepared tempering over cooked dal in a serving bowl. Garnish with chopped coriander leaves and serve with Baingan Bharta-Baati-Churma Laddos.

Method:

1. In first step, crush the baked baatis and make powder with the help of mixture.
2. In the next step, add Kishmish or Raisin, Charoli, Chironji, Cardamom or Elaichi Powder and tagar or shakkar ka boora in the powdered baatis.
3. In the next step, add pure ghee properly in the mixture and make tasty churma ladoos by pressing between palms.
4. Serve hot churma ladoos with Dal-Baingan Bharta-Baati Plate or Thali.
