Ingredients:
For The Vegetable Balls
½ cup finely chopped cauliflower
½ cup finely chopped capsicum
½ cup finely chopped cabbage
½ cup finely chopped beans
½ cup finely chopped carrots
½ cup finely chopped whites spring onions
2 tbsp all-purpose flour (maida)
1-2 tbsp corn flour
1 tbsp finely crushed garlic (lehsun) and ginger (adrak) paste
1 tbsp soy sauce
Salt and to taste
¼ tbsp Pepper (Kaali Mirch)
Oil for deep-frying
For The Sauce
¼ cup finely chopped spring onion
½ cup finely chopped spring onion leaves
1 tbsp finely chopped garlic (lehsun)
2 tsp finely chopped ginger (adrak)
1 tbsp soy sauce
½ tbsp green chillies paste
2 tbsp vinegar
2 tbsp tomato sauce
salt to taste
1 tbsp corn flour mixed with 3 tbsp of water
1 tbsp brown sugar or simple sugar
Method:
- Take all vegetables (cauliflower, capsicum, cabbage, beans, carrots, whites spring onions) in a strainer
- All vegetables wash properly
- All vegetables put in a cooker
- All vegetables boil in a cup of water
- All vegetables take in a strainer to remove excess water
- All vegetables take in a big bowl
- Now add 2 tbsp all-purpose flour in mixture
- Now add 1-2 tbsp corn flour in mixture
- Now add 1 tbsp finely crushed garlic and ginger in mixture
- Now add salt as per taste in mixture
- Now add ¼ tbsp Black Pepper in mixture
- Now add 1 tbsp soy sauce in mixture
- Now mix well all ingredients in the mixture
- Now make small vegetable balls from the mixture
- Now small vegetable balls are ready to fry
- Now put kadai on gas and put on the gas
- Now take edible oil in kadai to sufficient to dip balls
- Now wait till heating the oil properly
- Now dip all balls in heated oil one by one
- Now wait till getting all balls brownish in colour
- Now put all fried balls on tissue paper to absorb excess oil
- Now fried vegetable balls are ready to put in sauce
- Now take oil in a frying pan to make sauce
- Now add 1 tbsp finely chopped garlic in heated oil
- Now add 2 tsp finely chopped ginger in mixture
- Now mix well the mixture and wait till get brown colour
- Now add ¼ cup finely chopped spring onion in mixture
- Now add ½ cup finely chopped spring onion green leaves in mixture
- Now add 1 tbsp soy sauce in mixture
- Now mix and fry well the mixture
- Now add ½ tbsp green chillies paste in mixture
- Now add 2 tbsp vinegar in mixture
- Now add 4 tbsp corn-water mixture in the mixture
- Now add 1 tbsp brown sugar or simple sugar in the mixture
- Now mix and fry well the mixture
- Now add 2 tbsp tomato sauce in the mixture
- Now add salt as per need in the mixture
- Now mix and fry well the mixture
- Now mix all vegetable balls in the cooked sauce
- Now Veg Manchurian put in a bowl
- Now sprinkle chopped onion green leaves on Veg Manchurian
