Chhole Bhature is a spicy, tasty and a heavy dish. It is found in each restaurants or dhabas have their own flavors and taste in the Chhole. In some places it is very spicy, at other places it has tangy taste and the consistency of the curry also varies from slightly thick to semi-dry and dry.

Ingredients:
Chhola Making Ingredients:
1 cup Chick Pea or Kabuli Chana
6 to 7 pcs garlic
1 pcs ginger
2 chopped onion
2 chopped tomato
2 tsp chhola masala
2 small boiled potato
Salt as per taste
1 big tsp edible oil
1 small tsp tea leaf
1 small tsp gooseberry powder
Bhatura Making Ingredients:
2 cup all-purpose flour
1/2 cup curd
1 big tsp milk powder
1 big tsp semolina
1 tsp Salt as per taste
1 small tsp baking powder
1 small tsp baking soda
1 small tsp sugar
1/2 bowl warm water
1 big tsp pure ghee
salt as per need
Coriander leaves for decoration
Method:
- Now boiled whole night soaked Chick Pea or Kabuli Chana in cooker
- Now make a bag of tea and gooseberry powder and add to get chhole colour
- Now put pressure cooker on slow flam till 6 whistles
- Now take 2 cup all-purpose flour in a big bowl
- Now add 1 big tsp milk powder
- Now add 1 big tsp semolina
- Now add salt as per taste
- Now add 1 small tsp baking powder
- Now add 1 small tsp baking soda
- Now add mixture properly
- Now add 1/2 cup curd
- Now add little warm water and mix properly
- Now add 1 big tsp pure ghee
- Now add 1 small tsp sugar after dissolving in water
- Now properly mixed mixture cover with a cotton cloth
- Now put off gas and take out boiled chick pea in a bowl
- Initially make paste of ginger, garlic and onion in mixer grinder
- Now make paste of Tomato
- Now fry boiled potato in edible oil and put aside
- Now fry ginger-garlic-onion paste 1 tsp edible oil till get brownish colour
- Now add tomato paste and fry mixture for 10 mins
- Now add 2 tsp chhola masala and fry mixture for sometime
- Now add boiled chick pea or chhole and fry mixture for sometime
- Now add boiled chick pea’s water and fry mixture for sometime
- Now add salt as per taste and mix properly
- Now add boiled and fried potato and fry mixture for some time
- Now take sufficient oil in frying pan and wait till warm oil
- Now make large lemon sized balls of the dough and roll it out make ellipse as shown here
- Now fry all ellipse shape bhature one by one in warm oil till brownish colour
- Now bhature are ready to eat
- Now add chopped coriander leaves in ready chhole
- Now hot and tasty chhole bhature are ready to serve
